Crafted in Modena, Italy, it begins with the pure wine must (unfermented grape juice) of white Trebbiano grapes, slowly simmered in traditional open vats. The reduction is combined with an older white wine vinegar to speed fermentation, then aged in oak barrels. Infused with fresh figs, vanilla, scallions and saffron, these aged vinegar are delicious in vinaigrette’s, pan sauces and marinades.
